سلق وحمص ولحم بقري تُطبخ بالسمّاق الكثير وحب الشبت والثوم والشطة، وتُثقّل بالطحينة وتُقدّم بحرارة الغرفة مع خبز الطابون. ويطبخ أهل غزة بحرارة وشبت أكثر من أي مكان في فلسطين، والسماقية أوضح مثال. وهي طبق العيد وطبق العودة.
Chard, chickpeas and beef stewed with a great deal of sumac, dill seed, garlic and red chilli, thickened with tahina and served at room temperature with taboon bread. Gaza cooks with far more heat and dill than anywhere else in Palestine, and sumagiyya is the clearest example. It is the dish of Eid and of homecomings.
